Every Monday I make a new batch of high protein eggs for my family to eat through out the week. These are so great for breakfast tacos, breakfast sandwiches and breakfast bowls. I started adding cottage cheese to eggs months ago for aded protein and I wish I would have learned this trick a long time ago! This batch makes enough for about 10 servings making breakfast choices in the am a breeze! Sometimes I will go ahead and make the tacos or sandwiches and wrap them in foil for an even easier grab and go breakfast for the mornings I am in a rush.
